🔶 Key Responsibilities
Managing Daily Operations
- Oversee dish room operations, night cleaning, back dock maintenance, banquet plating, food running, and utility teams.
- Order and manage kitchen supplies, equipment, and uniforms.
- Schedule staff activities and ensure smooth workflow.
- Maintain and inspect equipment, serviceware, and work areas.
- Conduct inventories of china, glassware, silverware, smallware, and food supplies.
- Monitor inflow of materials and maintain stock.
- Enforce proper sanitation and cleaning procedures.
- Ensure compliance with food safety regulations and hygiene standards.
- Ensure proper handling, cleaning, and functioning of dishwashing machinery.
- Maintain communication with executives, peers, and team members.
- Investigate and follow up on staff accidents or incidents.
Leading the Kitchen Utility Team
- Provide leadership, motivation, and direction to kitchen support staff.
- Supervise day-to-day operations and step in to perform duties when required.
- Maintain employee productivity and enforce performance standards.
- Recognize team achievements and encourage a positive work culture.
- Build trust, respect, and cooperation within the team.
- Oversee departmental budgets and control operational expenses.
- Strive for continuous service improvement and operational excellence.
- Support employees through feedback, coaching, and open communication.
Ensuring Guest Satisfaction
- Coordinate with management to improve service quality.
- Monitor service performance daily and ensure standards are met.
- Emphasize customer satisfaction in team briefings and operations.
Human Resource Responsibilities
- Recruit, interview, and select new team members.
- Train employees on safety, sanitation, equipment handling, and chemical usage.
- Monitor performance and provide constructive feedback.
- Implement disciplinary procedures in line with SOPs and LSOPs.
- Review employee satisfaction indicators and address concerns.
- Maintain fair and consistent application of company policies.
🔶 Candidate Profile
Education & Experience
Option 1:
- High school diploma or GED
- Minimum 4 years of experience in procurement, food and beverage, culinary, or related field
Option 2:
- 2-year degree in Hotel & Restaurant Management / Hospitality / Business Administration
- Minimum 2 years of related experience
